Dibrugarh buyers, Tinsukia traders and a Tezpur river port: who eats out in Assam

Guests of an Assam restaurant arrive for trade, tea and the river. A few districts, and what brings people there.

  • Dibrugarh launched Upper Assam's first public online tea auction in September 2026; 18 buyers took part and teas averaged about Rs 207 per kg.
  • Incredible India describes Tinsukia as Assam's industrial powerhouse for tea, oil, coal and commerce.
  • Under the British, Tezpur became an important centre of trade and commerce, used as a river port for the surrounding tea gardens.

From the fish count at noon to the page that closes with a guest's last breakfast

  1. A slip that names the fish thali, the plain thali or the duck thali

The table's order now reads in three words instead of one. The kitchen sees how many plates of each are wanted, and the fish curry is ladled only into the plates that asked for it. At the end of the day the three kinds sit on three lines, so you see which plate the park's visitors chose.

  2. Breakfast, tea and the packed lunch, added to the guest's list as they are served

On the first evening open a page for the guest. Each breakfast, tea and packed lunch goes on it with its day. On the last morning the family reads the list top to bottom, nothing has gone missing, and the total at the bottom is the sum of what they had.

  3. The duck for Sunday starts cooking on Saturday, and the bill waits for the table

Share your shop page with the regular families. The family that wants duck for Sunday lunch sends its order from the page on Friday, and it waits on your phone. The kitchen starts the duck the day before. The bill is made on Sunday, when the family sits down, for the duck they eat.

The thali that finishes its fish by two, the duck ordered a day ahead and the homestay guest who pays last

  • One thali, with fish and without, and the fish gone by two

The Assamese thali comes in two kinds at the table: the one with fish and the one without, and sometimes a third with duck or mutton. The rice, dal, aloo pitika and greens are the same in all of them, so the slip says only thali. By two the fish curry is finished, and every guest who comes later is told no, but the slip already counted them as thali with fish.

  • A duck curry that the kitchen cooks only for an order made a day ahead

Some dishes cannot be started when the guest sits down. The duck curry needs a day, and the family that wants it for Sunday lunch calls on Friday. You write the call on a scrap, and on Sunday the scrap is under a pan. The family arrives and the kitchen is half ready, or the duck is cooked and the family has changed its mind.

  • The birdwatcher at the homestay, eating at odd hours for a week

A guest who has come for the park leaves before dawn and returns after dark, and eats breakfast at six, a packed lunch at ten and dinner at nine, never at the hour of the other tables. Each meal is small and each is served by a different person. On the last morning he asks for the total, and you add it up from scraps with one meal you cannot find.

Tools for a thali counter, a tea stall and a homestay table

  • Online orders

A family's Sunday duck order arriving from your shop page on Friday and waiting on your phone until the kitchen starts.

  • Credit book (khata)

A page for a guest's stay or a tour operator's group, each meal dated, closed on the last morning with one total.

  • Daily reports

A list of the day's plates by kind at two o'clock, so the second pot of fish is started or skipped.

What Assam restaurants and homestay tables ask about thali plates and stays

The driver of a tour coach eats at a lower rate than the guests. Can his plate be billed apart from theirs?

Yes. Make the driver's plate its own item with its own rate. The guests' plates go on one bill and his on another, so the group's total is not mixed with his.

The birdwatcher's packed lunch goes out at six but he eats it at ten, far from the table. When do I add it to his page?

Add it on the day and at the time it goes out. His page then reads breakfast, packed lunch and dinner under each date, so on the last morning the total has all three for every day.

Coaches bring groups in the first weeks after the park reopens. Can I count the group plates apart?

Yes. Make the group's thali an item of its own and bill each coach under the driver's name. The first weeks' group plates stand on lines of their own, and later you open them beside the quieter weeks.

Kaziranga's season, and the tables that feed its visitors

Kaziranga National Park reopened for the 2026-27 tourism season on 3 October 2026, after its annual monsoon closure. For a restaurant on the road to the park, the first weeks after the opening are the first weeks of the year with real crowds.

Kaziranga had a record 4,58,618 visitors in the 2025-26 season, up about 8.5 percent, which the report says helps local hotels, homestays and transport operators. A kitchen that serves them is one link in that, and the stays and coaches it serves are what its pages and bills record.
