Billing for your dairy and milk shop in Uttar Pradesh
Every morning's litres, written against the house they went to.

From the first can of the morning to the last glass of lassi
Two rounds a day, one page per house
The evening round adds to the same page as the morning's. If the boy forgot two houses in the morning, their litres are written in the evening on their own pages. At the month's end every house's page has every day, with nothing left in the boy's head.
Separate rates for buffalo and cow milk, with no argument at the door
Make buffalo milk and cow milk two items with their own rates. When the fodder gets dearer and the rate goes up, change it once. Old bills stay at the old rate, and the new ones carry the new one. The house that compares sees the day each rate began.
The leftover can, counted every day for a month
Note the litres left at the end of the round and what they became: so many into curd, so many into paneer. At the week's end the leftover litres and the curd and paneer made from them sit side by side, and you see how much the can really gives before the festival's khoya order is planned.

Litres, curd and paneer: what a UP dairy asks of a phone
Credit book (khata)
A milk account for each household, with every day's litres on it, added up for the month.
Bills on your phone
Buffalo milk by the litre, curd by the bowl and a glass of lassi on one bill, sent on WhatsApp to the house that asks for it.
UPI payments
The month's milk paid by UPI, with the amount written on the same house page where the litres are.
Daily reports
Morning and evening litres kept by the day, so the festival weeks can be compared with ordinary days.
Sell to other businesses
For the sweet shops and tea stalls that take milk, curd and paneer from you every day: they apply to buy on credit, and you decide.

Why the milk account of a UP dairy never matches at the month's end
Two rounds a day, one notebook, and a missed morning
The milk round starts before it is light and goes again in the evening. At every door you pour the litres and write them in a notebook: one litre here, two and a half there, an extra half litre because a guest came. On a rushed morning the boy who helps you forgets to write at two houses. At the end of the month those two houses say they took less, and you cannot prove otherwise.
Cow milk, buffalo milk and one price in the customer's head
Some houses want buffalo milk, some want cow milk, and some change in the summer or when a child is ill. The rate is not the same for both, and the rate can change when the fodder gets dearer. The customer remembers last month's rate, you remember this month's, and the argument happens on the doorstep with the can in your hand.
Curd and paneer that cannot wait for tomorrow
Milk that is left over becomes curd, and curd that is left becomes buttermilk or paneer. At festival time the sweet shops ask for khoya and paneer and the milk is not enough. At other times the cans come back from the round unsold, and one day's leftover curd is the next day's paneer, with nobody counting it.

Brass, saddles and flour mills: the customers a UP dairy counter knows
The people who drink your milk work in every kind of trade. A few of the districts where that trade is known:
- Moradabad is called Brass City, Peetal Nagri. It is famous for a huge export of brass handicrafts to North America and Europe.
- Kanpur has a long saddlery trade from colonial times. Today it is the only independent centre making leather saddlery for global markets.
- Jaunpur's economy depends mainly on agriculture because it has no heavy industry. About 85 industrial units, such as a flour mill, run at Satahariya.
- Sitapur is known for its traditional wool carpets, called dari, woven on traditional looms. It is the district's One District One Product.
What UP dairy owners ask about litres, houses and festival khoya
The boy forgot to write one house this morning. How do I catch it the same day?
At the end of the round open the day's bills against the houses on your list. The house with no bill is the one he missed, so you know before evening, and the house cannot say it took less.
Before the festival the sweet shops ask for khoya, and after it the cans come back. How much khoya do I make?
Open last year's festival week and read the kilos of khoya that went and the cans that came back after. Make the khoya from those numbers, not from what the sweet shops say.
My buffalo milk and cow milk have different rates. How do both show in the daily report?
Each is its own item with its own line in the daily report. Read down the week, and a week of more cow than buffalo shows at once.
Milk from the village society to the town counter
The Pradeshik Cooperative Dairy Federation links village dairy cooperative societies to organised markets, and electronic milk analysers now measure milk quality and quantity at collection. A dairy that sells its own milk can use the same idea on its own counter: write down what was measured, not what was remembered.
Before Diwali 2025, Uttar Pradesh's food safety department seized 2,993 quintals of unsafe food in a drive from 8 October, including khoya in Lucknow, Jhansi and Mirzapur and paneer in Mathura. A dairy that sells its own paneer and khoya can show where each batch came from, because each went into its stock on its own day.
