Billing for your dairy in Rajasthan, village or town
The daily litres, the monthly account and the udhaar, all in one place.

Where the monthly milk account slips in a Rajasthan dairy
Houses far apart, and a round on sandy tracks
In a Rajasthan village the houses lie far apart, and the milk round goes by cycle or motorbike across the sand between hamlets. Nobody turns back to ask a house what it took. A house takes extra when guests come and skips milk when the family is away at a wedding, and the month's money is collected on one trip against the memory of twenty-five houses.
Rates move, and the old slip does not
From 21 May 2026 Jaipur Dairy raised Saras milk by Rs 2 a litre: toned is Rs 56, standard Rs 62 and Gold Rs 70. In the same month a 1 kg paneer pack went from Rs 362 to Rs 385. If the rate changes and your slip still carries the old one, you lose on every litre and every kilo.
Festival demand and a counter that never empties
At Teej and at Makar Sankranti the sweet makers come for mawa and paneer for their ghewar and sweets, and families who buy a litre on other days come for five. The curd you set the night before is short by noon, and the next lot cannot be ready before evening. Whoever stands first at the counter takes what there is.

From the morning round to the month's last bill
A summer counter of chhach by the glass and curd by the tub
In the hot months a Rajasthan dairy sells chhach by the glass, lassi in clay cups and curd by the tub across the counter, on top of the milk round. Give each its own price. The chhach is for the passer-by in the heat, the lassi in the clay cup is for the one who stops to sit, and the tub is for the house.
Toned, standard and Gold, each with its own rate from a given date
When Jaipur Dairy's rate changes from a date, enter each milk's new rate from that day: toned, standard and Gold carry their own. Milk written before it stays at the old rate and milk written after it carries the new one, so a house that argues is shown the date.
Clay cups, tubs and ghee tins counted down as they sell
Give each clay cup of lassi, each tub of curd and each ghee tin its own count. Every sale takes one off, so the counter does not run out in the middle of a hot afternoon. After Teej you see which of them went first and order those before the next festival.

Tools for milk, curd and paneer counters
Credit book (khata)
A page for each dhani house with the months written one under another, so a house that went to a wedding for a week shows the gap.
Bills on your phone
A bill for each house's month, with the days' litres on the page it is made from, sent on WhatsApp.

How much milk, curd, paneer and ghee sold each day, in one report.
Low stock warnings
Tonight's curd, tomorrow's paneer and the clay cups for the curd: a warning comes before the cups run out.

A page of today's chhach, curd and paneer that dhani families can look at before the round reaches them.
Sell to other businesses
Sell milk and mawa in bulk to other village shops and sweet makers, who apply to buy on credit.

Rajasthan's districts, and what a dairy hears there
Every district of Rajasthan has its own trade, and every dairy hears about it.
- Alwar's famous sweet is the milk cake, Alwar ka mawa, sold at Tripolia Market and the markets near Hope Circus.
- Nagaur has a huge trade in dried red chillies, and its cattle fair is held every November.
- In Jaipur, Johari Bazaar is the hub for gemstone jewellery, and Tripolia Bazaar is known for lac bangles and textiles.
- For Sikar, the Rajasthan Foundation lists dal, edible oil, cattle feed, granite tiles and PVC pipes among local industry opportunities.
- Udaipur is renowned for miniature paintings and marble carvings, and has the Shilpgram craft village.
- Jodhpur is a major hub for carved wooden furniture, wrought iron and handicrafts, with a handicraft special economic zone at Boranada.
- Ajmer's mineral-based industries include feldspar grinding, asbestos cement pipes, cement, marble, granite and salt production.
- Jaipur is known for block printing, blue pottery and gemstone jewellery; Sitapura Industrial Area is an export zone with wooden article makers and textile units.
What Rajasthan dairy owners ask about the milk book
Saras paneer went up in May. How do I see what it did to my own paneer on the shelf?
Read the kilos of your paneer for the weeks before and after May. If more kilos went, the rise sent customers to you; if not, they paid it.
In the dhani the milk is poured by the ladle, not by the litre. Can I enter ladles?
Yes. Set the milk as an item sold by the ladle if that is how you pour it. The bill counts ladles and the house's page shows ladles.
I set curd at night and make paneer in the morning. When do they go into the count?
When they are made, before the first sale. Add the paneer's kilos and the curd's tubs to the stock as they are ready, and each sale takes its share off. What is still milk is not in the count, so you never promise curd that is not set.
A hotel takes curd every morning and pays by UPI on Sunday. Where is the UPI payment noted?
On the hotel's page, beside the week's curd bills, so the page shows what was paid and what is left.
Bikaner's sweet makers and the tourist months
Around 500 units in Bikaner make bhujia, papad and rasgulla, and the town has over one lakh labourers, an IANS report said in April 2020. Rasgulla starts as milk, so a dairy in such a town sells to sweet makers by the can as well as to families by the litre, and the two kinds of customer need separate pages.
Rajasthan's tourist peak season runs from October to March, according to the Deputy Director of the state tourism department. Those months fill hotels and tea stalls that take milk, curd and lassi every morning, and a dairy that bills each of them daily sees the season in its own sales.
